Gluten Free Dairy Free Sweet Potato Casserole Recipe

Are you gluten-free but think Thanksgiving or Christmas isn’t complete without Sweet Potato Casserole?  Try this gluten-free, dairy-free sweet potato casserole recipe that you make in a crockpot!

I think one of the worst things about having dietary restrictions from food allergies and intolerances is the inability to partake in many holidays.

I’ve always had a love affair with food.

Then, I began to have some health issues and thyroid medication wasn’t touching some of my thyroid symptoms.  After a while, and having done some research, I determined I needed to try going gluten-free.  Later, I learned I also needed to cut other foods out of my diet, and a major problem food was dairy.

Dietary restrictions were like a death sentence when first making changes to the foods I was eating.

Gradually, though, I found suitable gluten- and dairy-free replacements for most of my foods.

Still, holiday foods weren’t usually safe.  So, I end up making a plate of food for myself every holiday and rarely get to actually eat a real Thanksgiving or Christmas dinner.

That had to change!!!

So, I hosted Thanksgiving and made sure everything I made was safe for my food allergies.  I decided I would eat like royalty and hopefully show friends and family, in the process, that eating gluten- and dairy-free wasn’t as bad as anyone makes it out to be.

The first year I host, I made a last-minute decision to search for a gluten-free and dairy-free sweet potato casserole recipe.  In my mind, holiday meals aren’t complete without a humongous helping of sweet potato casserole.  If you don’t agree, I’m not sure we can be friends 😉

The good news is, there are too many necessary supplies to make this fantastic gluten free dairy free sweet potato casserole recipe!  This is what I use:

6 Qt Crock-Pot/Slow Cooker – I use an older version of this Rival Crock Pot

Potato Masher – something like the KitchenAid Gourmet Wire Masher

Reynold’s Slow Cooker Liners (because cleanup is SO much easier with these)

Gluten and Dairy Free Crock Pot Sweet Potato Casserole Recipe

I promise, no one will be the wiser that you're serving gluten free and dairy free sweet potato casserole.
This recipe has been adapted from the cookbook "365 Favorite Brand Name Slow Cooker Recipes & More".

Ingredients

  • 1 40 oz can Bruce's Sweet Potato in Syrup drained and mashed
  • cup Earth Balance Soy Free Buttery Spread (GF & DF) melted
  • 2 Tbsp granulated sugar
  • 2 Tbsp brown sugar
  • 1 Tbsp orange juice optional
  • 2 eggs beaten
  • ½ cup rice milk unsweetened, no added flavors

Topping Ingredients

  • ½ cup brown sugar
  • ½ cup pecans chopped
  • 3 Tbsp Bob's Red Mill GF 1 to 1 Baking Flour
  • 3 Tbsp Earth Balance Soy Free Buttery Spread melted

Instructions

  1. Place Reynold's Slow Cooker Liner in slow cooker

  2. Drain sweet potatoes and mash. (I use a simple potato masher) and leave them to be slightly chunky.

  3. Mix sweet potatoes with 1/3 cup melted Earth Balance, granulated sugar, 2 tbsp brown sugar.

  4. Beat or whisk eggs.

  5. Mix eggs, orange juice, and rice milk into the sweet potato mixture.

  6. Poor sweet potato mixture into the slow cooker and spread evenly.

Topping

  1. Melt Earth Balance buttery spread, then combine with pecans, flour, and brown sugar

  2. Using a spoon (or fork) sprinkle topping mixture evenly over casserole in slow cooker

  3. Cover and cook on high 4 hours

Feel free to experiment with your milk and sugar substitutions in this sweet potato casserole recipe too!

I’ve made this gluten-free, dairy-free sweet potato casserole with coconut sugar instead of brown sugar.  Sometimes I’ll use coconut milk (not canned) in place of the rice milk.

That’s what I like about this recipe!

It’s easily adaptable, just know that I’ve never tried to make this vegan by using Flax Eggs, so if you ever try it and it turns out, let me know!

Now, take this bad boy to your next family gathering.  If your gluten eaters decide to be jackwagons and not try it because they won’t be persuaded gluten-free is yummy.  Their loss and your gain … which happens to be like 2 lbs in a day.

I’ve been known to sit down and nearly make a meal out of this gluten-free, dairy-free sweet potato casserole.
